Quinoa Porridge with Berries

Ingredients:

1 cup quinoa

2 cups coconut milk

1 tbsp maple syrup

1 cup mixed berries

Instructions:

Rinse quinoa and combine with coconut milk in a pot.Bring to a boil, then reduce heat and simmer until quinoa is tender, about 15 minutes.Stir in maple syrup and top with berries.

Grilled Chicken Salad with Mixed Greens

Ingredients:

1 chicken breast

4 cups mixed greens

1/2 cucumber, sliced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, sliced2 tbsp olive oil

1 tbsp lemon juice

Salt and pepper to tasteInstructions:

Grill the chicken breast until fully cooked, then slice it.In a bowl, combine mixed greens, cucumber, cherry tomatoes, and red onion.Top with sliced chicken.Mix olive oil, lemon juice, salt, and pepper for the dressing and drizzle over the salad.
